Leo has been working in the yachting industry for the past six years, following four years on traditional tall ships where he developed his seamanship through hands-on, old-school training. He began his career sailing on vessels over a hundred years old—some without engines—which instilled in him a strong work ethic, resilience in heavy weather, and a deep understanding of doing things properly from the ground up. That foundation gave him solid sail-handling skills, strong situational awareness, an appreciation for teamwork, and a lasting respect for the sea. He grew up in Maine after moving there at a young age, where the coastline and maritime culture played a significant role in shaping his character and career path. He is half English and half American. Looking ahead, Leo aims to eventually build a home on the water in Maine, spending summers sailing and winters skiing. For now, he remains focused on continuing to grow professionally, refining his technical skills, and being a strong, reliable asset to the vessels he joins as a third engineer.

Born and raised in the culinary heartland of Australia’s Yarra Valley, Jessie began her career at just 14, cutting her teeth at the renowned winery Yering Station. There, her foundations in classical French cuisine and wine pairing were laid—skills that would define her global culinary journey.
After completing her apprenticeship, Jessie refined her craft at Melbourne’s acclaimed 2-hat restaurant Ezard, mastering the fusion of Asian flavours with traditional French techniques. In 2009, she made the leap to London, working under Jamie Oliver at Fifteen before being drawn to private cheffing in the French Alps, where she catered for luxury ski clientele in Val d’Isère.
Her passion for adventure and fine food soon led her to the world of yachting. Jessie quickly rose through the ranks, becoming Head Chef aboard M/Y Unbridled at just 20. For three years, she travelled extensively with an American family, cooking her way through the Caribbean, South Pacific, South America, the Mediterranean, and the U.S. West Coast. She later held the sole chef position on M/Y Harle, running intense charter seasons that sharpened her leadership, creativity, and time management.
In 2015, Jessie returned home to bring a long-held dream to life—founding Locavore Catering, a bespoke events company based in the Yarra Valley. Since then, she’s opened multiple commercial kitchens, two cafés, and a gourmet food store. Her flagship café earned a spot in Melbourne’s Top 30, and today she leads a team of over 50, including 11 chefs and three event coordinators.
Now back at sea aboard M/Y Sealion, Jessie brings with her a global perspective, a deep respect for produce, and a cooking style that’s vibrant, elegant, and rooted in connection. Whether it’s a casual lunch on deck or a refined multi-course tasting menu, every meal she creates is crafted with intention and joy.

Nadine grew up in Germany, where her Spanish parents emigrated before she was born. Feeling part of both cultures but not completely immersed in either and, maybe receiving a desk pad with a map of the world as a gift, had her dreaming about living by the sea and traveling the world from a young age. Nadine realized that she had a talent for languages and strategically chose a job that she could pursue anywhere. She started working in hotels after graduating from college and has been working in the hospitality and service industry for over 25 years, including restaurants, bars, hotels and cruise ships. Being around the ocean ignited a passion for marine life and the underwater world, which prompted her to take some time off from the service industry to become a scuba diving instructor. It was in Honduras when she met a deckhand who told her about the yachting industry in 2011. She didn’t think twice and decided to give it a try. With her established background in hospitality it did not take long until she was promoted to Chief Stewardess and has been in charge of running various yachts’ interiors since 2012, where she brings a very high level of personalized service and guest satisfaction. Nadine looks forward to receiving our guests onboard and together with the interior team providing unforgettable moments and experiences on board.
